Potato salad with capers and lemon

A recent favourite

dressing: 2 garlic cloves pressed,
the zest of one whole lemon
fresh rosemary ( 2-3 springs) leaves finely chopped
2 Tbs capers
olive oil
juice of one lemon
salt and pepper to taste
*small tip - toss the potatoes with the dressing as soon as they are done cooking and leave to cool in the fridge dressed.

Ahh sweet summer sunsets
sandy toes
salty skin
 iced coffee mornings
rushing to do anything or go anywhere quickly is impossible
 the heat is heavy

May your Monday be slow and gentle

  6. HI Annie, Hope the morning is being gentle with you and if not, coffee is at times a woman's best friend.

Kenza, Thank you and I am behind in looking at your food blog, still have plans of making your lemon mousse!

    Dina,
I can totally relate (although Stella is out of the breast feeding days) but it is really tough rushing in this heat- thank god for siestas!
The beach is Ghajn Tuffieha. We should BBQ there together sometime soon!

  7. Yummy! That looks delicious and light. Do you use capers from a jar like here in the States?

Your sunset is beautiful. I am needing a getaway from our heat. Does it get to 100F there? Our heat index is around 110 today. Ugh!
