Wednesday's Corner View: Sweets


With the nearing of Carnival here in Malta come the arrival of the  Prinjolata cakes, a special treat for just this time of year. The sweet overdose before lent. Have taken it upon my self to taste test as many slices as I can this year in order to find the best one and then to gleen the recipe if possible. Will be back with an update and hopefully a good recipe in a weeks time.  So far St. James Cavalier in Valletta is number one, Pictured above is it's huge cake on display.   2. Wow! I guess that is the Maltese version of King Cake. Very interesting. Looking forward to the recipe.

  3. Can confirm the slice I had from this one was indeed good! It was about a fifth of the slice that you see cut out here, a dense 200 gram sort of piece! Usually they are made with some combination of crushed biscuits, pine nuts, almonds, candied orange peel, vermouth, sweetened condensed milk, bits of chocolate, eggs and who knows what else, am still in the getting-to- know-this-cake sort of way.

  5. oh! that looks so good with a coffee it must be heaven! I hope you get the recipe. By the way, I posted a Dahl recipe on La Tulipe you may like since you mentioned Dahl the last time. The children may like it too since it is really tasty (put less turmeric or none at all if you prefer and replace it with a little bit of cumin for the children).   10. Like Dina I have never tasted this dessert. One reason could be that someone told me that its covering is made of raw eggs - something which I'm not keen about. But I could be mistaken. Better wait for next year to have a good taste of it.

  14. wow! looks like some fantastical snowy fairyland cake. cannot wait to hear the recipe.

    (and, zen, you can most likely purchase dried egg whites (which is what the frosting is most likely made of) or try buying your eggs from a reputable farmer who sells the eggs directly to you: no salmonella.)

  18. Kryn, nope nothing like panatone. This is dense stuff, condensed milk, nuts,crushed biscuits, candied orange peel and chocolate.
